Beginners Cookery Courses


Our Diplôme de Cuisine is made up of three certificates at basic, intermediate and superior levels. Students can choose to complete these courses consecutively to receive their diplôme, or separately as individual courses.

This system gives students the flexibility to study to their desired level. Both our basic cuisine and pâtisserie courses are designed to give pupils a solid grounding in basic techniques and flavour combinations.

Under the expert guidance of our award-winning Le Cordon Bleu Master Chefs, students will come away with the skills needed to accelerate their road to culinary excellence.

Basic Cuisine Certificate

Our Basic Cuisine Certificate opens the door to the adventures of classic cuisine, showcasing the French cooking techniques which form the foundation for many international cuisines.

About the Course:

From day one, your passion for learning will be nurtured at Le Cordon Bleu. Our beginners cookery course is designed to teach you everything you need to know about cooking the basics of the French cooking techniques which form not just French cuisine but many international cuisines.

At the beginning of your studies, you’ll develop the primary skills needed to cook effectively, like how to hold a knife properly, peel vegetables and truss a chicken.

As your knowledge and skills advance, so to will the curriculum. Students will be instructed on how to use and integrate condiments, herbs, and spices which compliment their proposed dishes.

Course Structure:

Le Cordon Bleu’s Basic Cuisine Certificate is a full-time course of study, which lasts three months. You also have the option to cover the curriculum in 7 weeks if you choose the intensive summer course. There are four intakes throughout the year, with classroom time averaging 18 to 21 hours per week.


Beginners Pâtisserie

Our Basic Pâtisserie Certificate is the perfect course for sweet-toothed novices and is sure to have you creating your favourite desserts in no time.

About the Course:

Designed to equip you with everything you need to master the basics of pâtisserie, our course is perfectly suited to beginners.

Under the guidance of some the most respected pastry chefs in the industry, you’ll learn how to master basic pastry doughs, sugar techniques and knife skills. You’ll also learn how to craft delicate petit fours and other basic entremets.

At the end of the your beginners course, students have the possibility of continuing their studies by applying for an intermediate certificate.

Course Structure:

Similar to the Basic Cuisine Certificate, the Basic Pâtisserie Certificate can be completed over 3 months, or 7 weeks if you choose the intensive summer course.

Students will spend approximately 15 to 18 hours in the class, while this can double to 30 hours per week if enrolled in the summer course.
