New Short Courses: Celebrating 130 years of Le Cordon Bleu

Le Cordon Bleu is celebrating 130 years of excellence in education this year, and to mark the occasion we are holding celebrations both locally and internationally in the company of our partners, our Le Cordon Bleu Master Chefs, our alumni and new students.

As part of celebrations taking place in London, we have designed a series of short courses which celebrate both classic French techniques and modern innovation in the culinary arts.

These unique courses will reimagine four familiar dishes for a modern palate, demonstrating how Le Cordon Bleu merges its passion for tradition with innovation. Culinary enthusiasts can sign up now for these exciting new courses –

11th March - Coronation chicken
The recipe "Poulet Reine Elizabeth" now widely known as Coronation Chicken was first created in 1953 by Le Cordon Bleu London to be served at the Coronation Luncheon of Queen Elizabeth II. During this course you will learn how to make a version of Coronation Chicken which retains the core idea of the dish, while updating it for a modern palate.

5th June - Black cherry souffle with fig leaf ice cream
The souffle is a French classic which can be sweet or savoury, with our choice a sweet black cherry and chocolate. An essential dish for any seasoned chef to master, you can learn how to create the perfect souffle from a Le Cordon Bleu Master Chef.

3rd September - Duck a l’orange
A timeless example of French cuisine, in this class we will revisit the classic duck à l’orange. At the end of the course you will have prepared a beautiful roasted and smoked duck breast with chicory, miso glazed carrots and orange sauce.

25th November - Pineapple tart tatin with coconut and lemongrass ice cream
Tarte tatin is a classic French dessert commonly made with apples, which are caramelized with butter and sugar before being baked in puff pastry. In this class we will revisit the classic recipe with a twist, by bringing exciting flavours of pineapple, coconut, lemongrass and temut pepper to the plate.
