When pastry and art become one: pastry workshop and homage to the Al Thani exhibition

Le Cordon Bleu Hôtel de la Marine is serving up a culinary experience combined with a visit to an exhibition. On the last Wednesday of every month, starting on October 30th , Le Cordon Bleu Chefs will be running a pastry demonstration to learn how to prepare a monochromatic dessert, followed by the opportunity to sample the creation. Once that tasty experience is over, it will be time to discover "Colour speaks all languages: the Al Thani collection exhibition”, before heading off to explore the Hôtel de la Marine’s sumptuous state rooms and loggia.


On the menu: 
  • October & November: BLACK - Black sesame and yuzu tart
  • December & January: WHITE - Coconut and clementine dacquoise
  • February & March: YELLOW - Passion mango tart
  • April & May: RED - Red fruit charlotte
  • June & July: BLUE - Blueberry tart with crème fraîche
  • August & September: GREEN - Green fig and green apple tart

To accompany the exhibition, Le Cordon Bleu’s Pastry Chefs have created a unique sugar work sculpture that echoes the exhibition mask. The imposing yet slender creation is 1.50m tall and 20cm wide, and is made from 25 kilos of sugar shaped into breathtaking mineral-like textures. Every last detail, from the blue moulded chocolate mask to the crystal sugar gogotte, has been designed to pay homage to the works on show while remaining accessible and evocative for all.

The Chefs drew their inspiration for this one-of-a-kind creation from the "Colour speaks all languages" exhibition, exploring numerous timeless pieces including the mysterious gogotte   a natural mineral formation   and the ancient Egyptian inlay technique.

The contrasting colours of blue and white guided their design, evoking the purity of minerals and the deep hue of sapphires. The gogotte, whose texture is reminiscent of desert roses, blends harmoniously with the raw structure, creating a balanced whole that embodies both fragility and strength.

When creating the sculpture, the Chefs sought to create a piece that would speak to one and all, echoing the exhibition’s title, Colour speaks all languages.
