New year, new skills: Le Cordon Bleu Australia releases new 2025 short courses
This holiday season, Le Cordon Bleu Australia is bringing the gift of culinary excellence to budding food enthusiasts across the country.
Special guests and friends travel from far and wide to celebrate our graduating students.
On Thursday, 25th August 2016, 420 guests arrived at the Adelaide Town Hall for Le Cordon Bleu’s night of nights. 94 students from both Adelaide and Sydney’s Bachelor degrees, and Adelaide’s Master’s degrees, graduated at the annual formal gala dinner.
Upon arrival, guests were treated to exquisite music from local harpist and singer, Emma Harwood, and during the ceremony and dinner, the Amicus Strings quartet provided the entertainment.
Amongst those in attendance were also VIP guests, Councilor Sandy Wilkinson, representing the Lord Mayor and the Adelaide City Council; Ms. Brenda Cleaver, Institute Director, for The Northern Sydney Institute part of TAFE NSW; Professor Elizabeth Roberts, Head of School, School of Tourism and Hospitality Management Southern Cross University; Mr. Norm Harrison, Bailli Délégué Australia for La Chaîne des Rôtisseurs; Ms. Serena Harrison-North, Bailli South Australia, La Chaîne des Rôtisseurs; Ms. Sally Neville Deputy Chief Executive Officer, Restaurant & Catering Industry Association; and our valued industry supporters from the Hilton Adelaide, InterContinental Adelaide, Mayfair Hotel Adelaide, and Adelaide Oval.
Guests dined on an entrée seasonal tasting plate of seared limestone coast beef salad, wild mushroom, garlic emulsion; chilli tequila prawn, avocado gel, lime sugar; and baked heidi gruyere, leek & chestnut tart. Main course was a sesame crusted ocean trout, braised gai lan, oyster mushroom, soba noodles and dashi broth; or a confit leg of wimmera duck, goats’ curd mash, maple roasted beetroot, pepperberry, orange glaze. Dessert was a decadent platter of chocolate lava cake, liquid chocolate centre, crème fraiche, and white chocolate crumbs. Délicieux!
In addition to the graduates, there were a number of students who were recognised for their outstanding academic results via the DUX Award. Le Cordon Bleu would like to congratulate the following students once again for their achievement:
