Careers Residential inspires hospitality dreams

In October, an excited group of high school students enjoyed a 3-day Careers Residential at Le Cordon Bleu Adelaide. On Day 1, alumni Leonardo Loureiro (ex-Head Chef, Adelaide Entertainment Centre) delighted them with a cooking demonstration and a delicious lunch. Their introductory lecture was on Food & Beverage, followed by an opportunity to discuss study and career aspirations with our Industry Engagement Team.

On Day 2, the group had an amazing feed at alumni-owned restaurant Plus 82 Pocha and heard Entrepreneur Steven Lee’s inspiring career story. The afternoon was spent at Mayfair Hotel learning how to create mocktails and discovering the secrets of hotel back-of-house.

The final day saw our guests in the commercial kitchens at Le Cordon Bleu Adelaide with Chef/Lecturers Simon Taylor and Jenni Key in cuisine and patisserie workshops. Later, they learned the art of setting up for a hospitality event. Their Career Residential event ended on a high note with an Award Ceremony where they received an LCBA parchment, watched by proud parents and staff.

Taste of Le Cordon Bleu is going virtual!

Melbourne campus is excited to announce it will be hosting its Taste of Le Cordon Bleu as a virtual event on 18 November 2020. We invite passionate foodies, high school students (& their parents), career changers, upskillers, and culinary enthusiasts to discover student life at Le Cordon Bleu Melbourne.

Le Cordon Bleu Melbourne hosted virtual masterclasses with guest chefs for students in lockdown during October. Chef Deniz Karaca demonstrated the bean to bar process at Cuvee Chocolate, while Chef Remco Brigou from Koko Black talked about his chocolate making experiences. Chef Kevin Cherkas, owner of Cuca Restaurant in Bali, spoke about the desire to excel, and Chef Santiago Cuyugan shared his career journey and experience as a Savour Chef.

Morning Tea for mental health

To support student wellbeing on national R U OK Day, Brisbane campus hosted a special morning tea. The event was an excellent opportunity for students to connect with peers and staff outside of the learning environment. Brisbane has had an excellent response to its Study Buddy initiative which provides student outreach activities such as ice skating, movie outings, trivia nights and cocktail events.

High school students excel in Lunch Box Challenge

Le Cordon Bleu Sydney staff partnered with Brigidine College and The Business Education Network to co-ordinate a Lunch Box Challenge for high school students at Brigidine College.

Year 11 hospitality students were challenged to serve 150 teaching staff COVID-friendly gourmet lunch boxes. Le Cordon Bleu Chef/Lecturers assisted students in the design, planning and service of a selection of multicultural lunch box treats.

The final menu included 3 mains and one dessert - Lamb kofta, quinoa tabouli, raita, and flat bread; Pulled pork burrito box, guacamole and salsa; Chicken Katsu, fried rice in an egg crepe with Tonkatsu sauce. The dessert was a Crème diplomat with macerated strawberries.

The Lunch Box Challenge was an excellent opportunity to introduce local high school students to our amazing Le Cordon Bleu chef/lecturers and to network with community.
