Patisserie Students Tackle the Croquembouche

The Croquembouche is one of the most impressive (and delicious) traditional French desserts. Our patisserie students start the day watching our head chef patisserie lecturer Sebastien Lambert assemble a croquembouche in our demonstration kitchen. They are then given a small break to process and prepare for thier very own attempt.


At the end of a long day students get to take their creations home, and chef Lambert generously delivers his to the ER department in Wellington Regional Hospital, as a thank you to those that serve our community.
