Kricket Chef and Co-Founder Will Bowlby led a cooking demonstration at Le Cordon Bleu London, to display how he marries traditional British cuisine with the flavours of Mumbai, which he continues to be admired for within the industry.

For his first dish, he prepared one of the most popular items on Kricket’s menu, and one he learned how to make in New Delhi called Moti Mahal, which is delicia pumpkin with makhana sauce & hazelnut crumble.

Chef Will told guests: “if you haven’t tried the squash, you haven’t lived!” Will often uses pumpkin when its available, rather than butternut squash, as it holds more sweetness, but any squash can be used.

For his second dish, he prepared flower lamb chops with burnt onion raita; a complex recipe packed with flavour and perfectly finished with squeezed lemon juice on the lamb to add a touch of freshness.

In 2014, Will spent six months travelling India, learning a variety of regional dishes. Once he returned to the UK, he worked at the Cinnamon Kitchen under the guidance of Vivek Singh for eight months. This inspired him to launch Kricket in Brixton POP market in 2015, with Co-Founder Rik Campbell. Since then, Kricket has become a firm favourite amongst celebrity chefs, and was nominated in the ‘Worth the Queue’ category the Evening Standard restaurant awards. In 2017 the team closed their temporary Brixton location, and opened Kricket Soho, a two-level, intimate restaurant on Denman Street.

Will has recently won ‘Asian Chef of The Year’, at the 2017 Asian Curry Awards – where he was shortlisted against several top Indian chefs across the country. Kricket Soho won the ‘Best Newcomer’ award, and also received a Bib Gourmand 2018 from The Michelin Guide.

Spring 2018 saw Will launch his debut cookbook, Kricket: An Indian-inspired cookbook, published by Hardie Grant Books. With a steadfast eagerness to explore Indian food and flavours, Will returns to India as much as he can, bringing back his findings to the kitchen at Kricket.

Three restaurants in three years… Will is a chef on a mission to bring cutting edge cuisine inspired by the street food of Mumbai to London.
