After its first twenty-one editions, the annual Madrid Fusión Foods of Spain Conference was held in January, during its traditional time of year, re-establishing the event as the landmark stage for gastronomy globally. With the primary goal of showcasing avant-garde cuisine, the event featured live keynote presentations and demonstrations given by the most influential chefs worldwide promoting world cuisines.
Since 2012, Le Cordon Bleu Madrid has continuously participated in the annual Madrid Fusión Conference. Like other years the Institute exhibited at the event with an information kiosk and hosted a live demonstration and masterclass on the venue’s polyvalent stage.
At this year’s event, our Technical Director, Chef Erwan Poudoulec, presented both the live demonstration and masterclass, taking us on an educational journey about mother sauces and teaching us about their origins and derived sauces, a topic that surprised attendees and filled seats.
Lastly, a team of former Le Cordon Bleu Madrid volunteers helped in the show kitchen and backstage, and a small selection of students enjoyed the exclusive keynote presentations and demonstrations.
