On January 30th, 2023, the first masterclass of the year in our “Off the Menu” series took place at Le Cordon Bleu Madrid. Executive Chef Mario Sánchez, and Dining Room Manager Charlotte Finkel, cofounders of the Madrid-based restaurant Comparte Bistró, kicked off the series.
The partners launched their bistro in December 2021, offering the best of Cádiz and Paris by using premium Spanish products and French flair to meld their cultures. The restaurant’s cuisine elevates traditional fare with Haute Cuisine techniques in its classic French bistro-style dishes.
Current students and alumni alike enjoyed the 2.5-hour cooking session, where the chef prepared two custom dishes: Vadouvan Beef Cheeks and Sherry Baba Dessert, explaining the step-by-step methodology. Once Chef Mario finished the dishes, the attendees enjoyed a glass of Oloroso wine while Charlotte explained the ideal food pairings for this style of wine.
This inaugural masterclass kicked off a new series of educational activities for the student community at Le Cordon Bleu Madrid. Mario and Charlotte explained the keys to a successful business model and personal project to students. Their business model has quickly become one of the most notable on Madrid’s food scene.
