History of mexican cuisine dates back about 10,000 years, to the time that we estimated corn was domesticated to become the crop who later became the food base of Mesoamerican cultures.
During this time, the indigenous people who lived in the territory had a diet based mainly on vegetables but, also corn, played an important part in this era.
With chilli and corn other species of no less importance are associated, some of which have transcended their native ecological niche to become supplies of the most varied cuisines. Include the tomato, cacao, avocado, pumpkin, prickly pear, vanilla, deified all of them in the figure of Chicomecóatl, who was the mesoamerican goddess of food.
Prehispanic cuisine had elaboration techniques that today are still very important in our cuisine, which are nixtamalización of the corn and steaming.
