Le Cordon Bleu Paris invites you to discover its end-of-year workshops, dedicated to two festive favourites: Foie gras and Yule log.
August 30, 2017 – Le Cordon Bleu, the leading Global Network of Culinary Arts and Hospitality Management Institutes, unveils two new oenology workshops which are open to the general public: Evening Wine Tastings and an Intensive Wine Course. Seize this unique opportunity to awaken your taste buds alongside leading wine sector professionals and discover just how much French heritage has to offer.
The workshop, which is split into 7 sessions, will take place from 16 October to 27 November 2017. The 2 hour sessions, each on a specific theme, are scheduled on Mondays from 7pm to 9pm at Le Cordon Bleu Paris institute. Classes will be taught in French and translated into English.
Participants will embark upon a training programme where the main focus is on a fun learning experience and not purely academic. They will be able to benefit from the extraordinary expertise and modern outlook of Columbian Alejandro Chavarro, Head Sommelier at the 3 Michelin-starred Astrance restaurant in Paris. Alejandro Chavarro will organize the tastings in partnership with the Institute’s Head of Wine Department, Franck Ramage, and his team.
Programme for the 7 sessions:
This 2-week programme is intensive and aimed at both amateurs and true connoisseurs who are keen to develop or perfect their knowledge in the field of wine. It is also ideal for Culinary Arts students and professionals from the hospitality/restaurant sector. Classes are taught in French and orally translated into English.
Participants will undertake 50 hours of training, made up of 25 hours of classes per week, which combines theory and practice. Two sessions are programmed: one in winter, from 15 to 26 January 2018, and one in spring, from 28 May to 8 June 2018.
Classes will take place at Le Cordon Bleu Paris institute, in a cellar-style tasting room, dedicated to wine, which has been equipped in partnership with Riedel Crystal glassware.
Consultants, experts and prestigious sommeliers, will work in partnership with Franck Ramage, Wine Department Manager and Wine and Management programme instructor at Le Cordon Bleu Paris institute. Franck Ramage previously worked as sommelier for prestigious establishments such as Michelin-starred restaurants Drouant and l’Amphyclès, the Ritz hotel and the Hôtel de Crillon.
Programme:
Upon completion of the training programme, participants will take a written examination and carry out a blind tasting in order to assess what they have learnt. A Le Cordon Bleu certificate will then be awarded.
