Molino de Urdániz is David Yárnoz's signature cuisine proposal, recognized with 2 Michelin stars and 2 Soles Repsol; the only restaurant in Navarra awarded with both distinctions.

During the masterclass on May 9th, chef Yárnoz and Jaione Echarri, head waiter and Sommelier of the restaurant, shared their knowledge of the local products, and shared with the attendees how, they manage to offer a proposal that exudes sensitivity and elegance while maintaining tradition and incorporating the most advanced techniques, giving rise to their cuisine: the cuisine of balance.

For the celebration of this meeting, the Institute counted with the participation of the Navarra Academy of Gastronomy who, with the help of David and Jaione, taught the students a perfect pairing for seasonal vegetables and wine highlighting the excellence of Navarra products.

During the class, the attendees had the opportunity to learn about some of the dishes from the gastronomic menu that the chef is currently presenting at the Molino de Urdániz and had the opportunity to delve into the creative process behind each one of them.

An interesting masterclass combining cuisine and dining room, in a perfect balance, which adds to the framework of the scheduled complementary training activities for the community of the Institute.
