OffTheMenu 2024 kicks off: We welcome chef Begoña Lluch
On February 27th, the Institute inaugurated its annual program of masterclasses with Begoña Lluch, Grand Diplôme® and first in her class at Le Cordon Bleu Paris.
Since September 2022 Begoña has been the culinary director, R&D director, and co-founder of Begoistas, a company specializing in cutting-edge nutrition. She is also a specialist in Healthy Epicurean Food and Health Coach by INN New York.
Students and alumni of Le Cordon Bleu Madrid enjoyed a masterclass that Begoña approached from several areas. Attendees learned how to prepare a delicious Eastern Mediterranean recipe, delving into symbiotic foods, functional foods containing probiotics and prebiotics, and how they improve microbiota balance. During the class, Begoña also discussed how to take advantage of superfoods such as pomegranate and shared with them her top 10 foods necessary for detoxification.
During the class, she prepared two recipes where she combined cooking, science, and nutrition, explaining the endless benefits for our microbiota. An interesting masterclass, held within the framework of the cycle of complementary training activities for the Institute´s community OffTheMenu.
