The Institute continues with its annual program of masterclasses. We received chef Juan Carlos García (Vandelvira*) and the olive oil. The IGP Aceite de Jaén, a province considered the "world capital of olive oil" offered the students and alumni an exclusive tasting of olive oil from Jaén, characteristic for its flavors with hints of vegetables and other such as fruity or herbal notes.

The class was given by Juan Carlos García from Vandelvira restaurant and awarded 1 Michelin star and 1 Sol Repsol, one year after its opening in 2022.

During the activity, three recipes were prepared with olive oil from Jaén that surprised the attendees. They enjoyed the way of cooking of this great chef who, after graduating in Culinary Arts and Gastronomic Sciences at the Baque Culinary Center, and working in numerous kitchens such as Azurmendi, Narisawa in Japan and with the Adrià brothers, returned to Baeza to start his project with his family in Vandelvira.

An interesting masterclass, held within the framework of OffTheMenu, the cycle of complementary training activities for the Institute´s community.
