Pan roasted cod
  • 4 x 180 g thick pieces of cod
  • 28 g salt
  • 20 ml olive oil
  • 50 g butter, chopped
Herb gnocchi
  • 400 g baking potatoes
  • 1 egg yolk
  • 75 g flour
  • 20 g fresh mixed herbs (parsley, chervil, chives), chopped
Clams
  • 100 g “palourde” grooved carpet shell clams, in shells
  • 1 shallot, finely chopped
  • 1 garlic clove, finely chopped
  • 20 ml olive oil
  • 50 ml white wine
Parsley and garlic sauce
  • 4 garlic cloves
  • 1 shallot, finely chopped
  • 25 g butter
  • 50 ml white wine
  • 100 ml fish stock
  • 100 ml whipping cream
  • 20 g parsley
Decoration
  • 40 g samphire
