  • 60 g ground almonds
  • 50 g icing sugar

  • 20 ml coffee extract
  • 40 g butter
Passion fruit coffee mousse
  • 3 gelatine leaves (6 g)
  • 150 g passion fruit puree
  • 30 ml strong coffee
  • 40 g sugar
  • 160 ml whipping cream
Macaroons
  • 40 ml water
  • 150 g sugar
  • 4 egg whites (110 g)
