Traditional French cuisine is heavy on meat and light on plants. Le Cordon Bleu master chefs have been challenged to change their thinking and apply traditional French techniques to the beautiful plant-based ingredients available in Aotearoa, New Zealand. They have developed an exciting plant-based menu, created in collaboration with one of Le Cordon Bleu New Zealand's alumni.
