1. Abalone, Vegan Tortellini, Corn Broth
This elegant starter marries the tender richness of abalone with delicate, hand-folded vegan tortellini, served in a velvety corn broth. For a full vegan experience, simply omit the abalone. Or replace them with marinated king oyster mushrooms. The dish still stands as a harmonious blend of flavours. This workshop highlights balancing umami-rich ingredients while introducing innovative plant-based substitutions. 2. Jackfruit & Sarawak Pepper Tart
