Le Cordon Bleu Japan offers a fully-funded culinary programme for foreign residents interested in learning the basics of Japanese Cuisine, in Japan! Learn the basics of the Japanese language, culinary techniques from master chefs, and apply them both in a 6-month internship at a Japanese cuisine restaurant. The programme spans from July 2016 to February 2017, as a special bursary program, developed under a project initiated by the Organization for Fostering Human Resources for the Promotion of Japanese Cuisine & Food Culture, targeted for culinary school graduates or industry professionals looking to broaden their culinary horizons.
Programme Structure
- 1-month basic Japanese language classes
- 1-month on-campus training programme with Japanese cuisine chefs
*upon successful completion of this portion of the programme, students will receive a Le Cordon Bleu Japanese Cuisine Initiation Certificate to be issued in February
Sample Class Content
- - Japanese knife skills
- - 5 basic skills of Japanese cuisine (raw preparations, simmering, grilling, steaming, frying)
- - elementary butchery and fish filleting
- - basic stocks and derivatives (dashi)
- - Japanese vegetable cuts
- - Japanese culinary terms (e.g. ingredients, tools)
- 6-month on-the-job training programme at a reputable Japanese Cuisine/Sushi restaurant
*applicants may suggest restaurant preferences, but the final decision rests with Le Cordon Bleu Japan
- Optional culinary-related activities during the programme

Application Requirements
Candidates must:
- must be 18 or above
- be a foreign resident
- able to communicate with school, chefs and other necessary parties in English as per minimum requirements stipulated by Le Cordon Bleu Japan
Programme Capacity: 15 participants
Candidates must submit all necessary documents with their application and will be selected based on the following:
- - Current culinary skill and background
- - Passion for Japanese cuisine/Japanese food culture
- - Potential in influencing his/her working environment upon their return
- - English ability
Application Procedure
Step 1 - Application
Candidates are required to complete the Application Form and send as a PDF document to infojapan@cordonbleu.edu before the application deadline. The additional required documents must then be sent as soon as possible. The following are all required documents:
- Application Form (including Resume, Statement of Motivation, Professional Goals in relationship with the Japanese cuisine)
- recommendation from place of employment or culinary institute (Outline of Dispatching Entity (Attachment 1)
- one of the following documents proving that the knowledge and techniques acquired through the programme will be applied relevantly:
- Certificate of Reinstatement (Attachment 2a)
- Certificate of Employment (Attachment 2b)
- proof of education in a culinary school (e.g. Le Cordon Bleu diploma)
- copy of your Passport ID page (passport must be valid until April 16, 2017, inclusive)
- ID photo (4cm x 3cm, no hat, no background, taken in or after March 2016, your name written on the back in alphabet)
If you are successfully selected as a participant, these documents will be used for the visa application process, insurance registration (health insurance and liability insurance), as well as registration for each training programme during the 8-month programme.
Step 2 - Confirmation
If you are successfully selected as a participant, you will be sent the Terms and Conditions, which should be read, signed, and sent to infojapan@cordonbleu.edu before June 3. Your admission to the programme will defer to the next candidate on the waiting list should you fail to submit this before the deadline.
