Day 1 – Foundations of Kimchi
Theory & Tasting

  • What is Kimchi and Kimchi Culture
  • Introduction to Kimchi varieties
  • The science behind Kimchi
Hands-On Session
  • Tasting session of different types of kimchi
  • Kimchi preparation – Wash and salting the vegetables


Day 2 – Fermentation & Family Traditions
Demonstration and Tasting:

  • Rinsing the brine from vegetables
  • Fermentation process: Marinade & jarring
  • Tasting Suyuk (boiled pork) with Makgeolli
  • Exclusive Chef’s Tasting & Q&A
  • Special “Family Recipe” cooked by Chef Injin
