Guest demonstration with Piotr Lesnianski

On 2nd October, Le Cordon Bleu London will be hosting a Guest Demonstration featuring Piotr Lesnianski, chef, baking instructor and self-taught sourdough baker.

For this demonstration, Chef Piotr will focus on using rare varieties of grains and pseudo cereals, milling them into different flours and using in sourdough loaves.

Guests will learn about the extraction rates and different ways of introducing whole grains into dough without compromising it’s structure and Chef Piotr will prepare two different kinds of porridge and demonstrate how to add flavour and texture through this technique.

 
Piotr Lesnianski

Piotr Lesnianski, also known as Bread Pete, has 20 years’ experience working in professional kitchens, training in different restaurants and under renowned chefs including Tom Aikens.

Chef Piotr focusses on milling fresh flours using heritage grains and other rare varieties of cereals.
