We are delighted to be joined by Le Cordon Bleu graduate, Virgilio Martínez Véliz, Chef Patron of the world renowned Central Restaurante in Lima, Peru, for a Guest Chef Event in partnership with Phaidon.
Considered as one of the greatest Peruvian chefs in a generation, Virgilio is Chef Patron of several restaurants, including the Michelin-starred Lima in London, his flagship restaurant Central - which is considered to be one of the best in the world by the World's 50 Best Restaurants - and two additional Lima restaurants in London, Lima Floral, and Dubai.
Virgilio Martínez also helped form Mater Iniciativa; a group dedicated to travelling Peru in search of unique ingredients which are often incorporated into his dishes, as well as being catalogued for local use and protection where necessary.
As well as other culinary intiatives, Virgilio has supported his wife, Pía León's restaurant's Kjolle in Lima and Mil in Cusco, returning the years of influential support Pía had working at Central. Pía has now too been individually recognised by the World's 50 Best Restaurants as The World's Best Female Chef 2021.
Now Virgilio has put his knowledge and the research of Mater Iniciativa into a new book. The Latin American Cookbook documents the vibrant food and culture of one of earth’s most extraordinary geographical regions. Spanning 22 countries, the book features 600 iconic, specialty, and locally distinctive home cooking recipes, showcasing the rich diversity of its peoples and food cultures. Peruvian food photographer Jimena Agois documented 165 of the recipes in the book, styled with regional dishware and linens, and there are additional evocative images of the landscape and environs taken by the volume’s co-author, the esteemed food and travel writer Nicholas Gill.
The Latin American Cookbook is published by Phaidon and will be released on 3rd November 2021.
