The Bake & Dine: Sweet Baking short course from Le Cordon Bleu offers participants a fantastic baking experience followed by an exceptional dining experience at Cord by Le Cordon Bleu.
During the course our Master Baker will show you how to make an enriched dough. All yeasted dough fits into one of two categories: enriched or lean. Lean bread contains little to no fat, and any fat present is by the addition of oil into the recipe like in pita or ciabatta. Enriched bread contains a high percentage of fat – most often thanks to eggs, milk, and or butter – and is also sweeter than its lean counterpart. With the enriched dough you will produce three different items, all unique by their taste and design, including hot cross buns, cardamom buns and apple buns.
No prior knowledge is required for this course, which is suitable for both novices and cooks with some experience, and all the food created during the day is yours to take home with you.
After this engaging session you will move upstairs to the restaurant where you can indulge in Cord’s exceptional Three Course Menu.
Class structure
Your day will be a mixture of in-kitchen demonstrations performed by the chef who is running the session and hands-on practical cookery, where you are guided by the expert teaching chef. The exact format will vary from class to class depending on the style of cuisine and length of the course.
