Jimmy Mornet, chef supervising pastry at Park Hyatt Paris-Vendôme
For a sweet start to the month of March, we will be welcoming Jimmy Mornet, an exceptionally talented chef from the Park Hyatt Paris-Vendôme. On 2 February 2017, he was awarded the title of Best Pastry Chef at the second YAM awards organised by the magazine of the same name: a trade press benchmark in the field of gastronomy.
Chef Jimmy Mornet began his training in Le Mans and Rennes alongside a number of One of the Best Craftsmen in France (Meilleur Ouvrier de France - MOF) in pastry before perfecting his skills with some of the leading French pastry chefs in Paris. In 2007, Jimmy Mornet began working at Maison Fauchon before joining Christophe Michalak’s kitchen brigade at the Plaza Athénée hotel. In 2013, he was awarded the title of European Sugar Champion and in 2014 was involved in the opening of the Peninsula hotel, alongside 2011 World Pastry Champion Julien Alvarez.
2016 marked a turning point in his career, when he began working as pastry chef at the Park Hyatt Paris-Vendôme. His trademark touch: imparting a new-style to French pastry classics with a daring and deft touch. His creations include a sorbet sphere coated in chocolate with a shortbread base in a wild strawberry jus infused with lemongrass and Le Cacaoyer, voted best chocolate dessert by the Lebey Guide in 2017
