
Chef Instructor Cuisine
Originally from the Doubs region of France, Chef Nicolas Vernier carried out his military service with the French Presidency at the Elysée Palace.
Chef Vernier began his career in 1990 as chef de partie at Le Negresco hotel’s restaurant, Le Chantecler, 1 Michelin star, in Nice. From 1992 to 1996, he worked as chef de partie at the Hôtel de Paris restaurant, Le Louis XV, 3 Michelin stars, in Monte-Carlo.
Chef Vernier began his career in Paris in 1996 at the 3 Michelin-starred Alain Ducasse restaurant. He then worked as chef de cuisine at the Il Cortile restaurant at the Sofitel Castille hotel, where he was awarded 1 Michelin star in 1998.
From 2002 to 2003, Nicolas Vernier provided training for professionals and individuals for the Alain Ducasse group - Alain Ducasse formation.
His experience led him to open his own restaurant, Caffe Minotti, on rue de Verneuil in Paris, which was awarded 1 Michelin star in 2005.
In 2008, Chef Vernier began working as a culinary consultant for various establishments in France and abroad.
Chef Nicolas Vernier returned to the south of France in 2013 and became chef-owner of Café Léa, which specialised in market cuisine, until 2020. He then worked as chef de cuisine at the Old Course Golf Club restaurant.
Chef Nicolas Vernier joined Le Cordon Bleu Paris team of Chef Instructors in 2024.
